Coming Soon … Chorizo and Saucisson Sec sausages!

And so it begins… Suze and I started work on some of our first cured sausages today. We made ten curingpounds of sausages for curing including Spanish Chorizo and Saucisson Sec. In about 20 days we'll know if we have a toxic nightmare or porcine goodness!   You can follow the progress here.
